Low Waste Pumpkin Coffee Cake

Is there anything better than a cool day, delicious coffee and a fall treat? It’s such a good way to welcome October. One of the things I look forward to every year is the pumpkin muffins from Dunkin’. I’m always a little disappointed after my first one, though. There’s never enough crumble on top, the icing is crunchy and it just has a weird after taste. Plus, as I mentioned in my overview post, it comes with trash that we can do without. This coffee cake is the answer to my fall, pumpkin, baked good dreams!

Last week, I got the news that I will be officially, 100% furloughed, which isn’t great but unfortunately, not that surprising when you work in travel. Last week was particularly heavy, but necessary, with the protests and conversations that George Floyd’s death sparked. Happy Monday, everyone! I hope you had a nice Easter or Passover, despite having to stay indoors and social distance. It was sad not getting together with my big family but we did make an Easter dinner, we had a zoom meet up with the family and, since it was a special occasion, we even made a point of putting on real clothes. 🙂
