So, here’s the thing with the Pumpkin Cream Cold Brew- There are a lot of steps if you want to get it exactly like Starbucks. But none of them are hard. In fact, it all comes together fairly quickly. I’m including the recipes first and then adding my notes and tips below them so please read through. If you have any questions, feel free to leave them below!

Low Waste Pumpkin Coffee Cake
Is there anything better than a cool day, delicious coffee and a fall treat? It’s such a good way to welcome October. One of the things I look forward to every year is the pumpkin muffins from Dunkin’. I’m always a little disappointed after my first one, though. There’s never enough crumble on top, the icing is crunchy and it just has a weird after taste. Plus, as I mentioned in my overview post, it comes with trash that we can do without. This coffee cake is the answer to my fall, pumpkin, baked good dreams!

Ok, let’s talk Low Waste baking. Overall, baking lends itself fairly well to low-waste. A lot of what you can purchase is already kept in eco-friendly packaging or there are easy swaps available.

Guys, I think I’m in a food funk. Summer is ending and I’m feeling very ready for soups and stews and pumpkins and apples.
But, it’s still in the 80s.

I didn’t post anything last week for Meap Prep Monday as I’m trying to get a bit ahead with my meal preps. Normally, I’ll meal prep Sunday or Monday and then post it right away on Monday. That doesn’t give me a lot of time to try out the recipes (though I definitely sample as I cook!) and take pictures. For this post, I’ll share with you what I meal prepped last week. It gave me a little more time to try things out.

Another week, another meal prep.
Last week, I got the news that I will be officially, 100% furloughed, which isn’t great but unfortunately, not that surprising when you work in travel. When countries are literally banning you from visiting, it makes it a little difficult to maintain your job planning international trips. Please wear a mask so we can get this virus under control and I can get back to work and we can all get back to traveling the world.

This week is actually 4th of July week. 4th of July. Wasn’t it March just last week?????
Here are my groceries for this week. My co-op has reopened for shoppers (yeah!), though allowing reusable bags for produce is questionable. I may be throwing everything in my cart willy-nilly next week if they don’t allow them!

June 8th Meal Prep

It’s been over a month since I posted anything and since then so much has been going on in the world. Last week was particularly heavy, but necessary, with the protests and conversations that George Floyd’s death sparked. I took some time away from posting and sponged up as much of the information as I could. I think the most interesting thing I watched was 13th on Netflix. I highly recommend it.

May 11 Meal Prep
Happy Wednesday, everyone! This post was supposed to go live on Monday but my blog and I are having a bit of a fight. I accidentally changed the layout on Monday when I went to post this and haven’t been able to figure out how to change it back. My bad! Hopefully, it will be fixed by next week. Until then, bear with me.

April 13th Meal Prep
Happy Monday, everyone! I hope you had a nice Easter or Passover, despite having to stay indoors and social distance. It was sad not getting together with my big family but we did make an Easter dinner, we had a zoom meet up with the family and, since it was a special occasion, we even made a point of putting on real clothes. 🙂
